Food & drink

Taste of North Macedonia

Macedonian cooking is pot cooking: beans, peppers and meat baked slowly in shallow earthenware until the top catches. Peppers are the national obsession, roasted by the sackful each autumn into ajvar and pindjur, and the Tikveš valley gives the Balkans one of its best dark reds. Everything starts with bread and ends with rakija. 14 specialties, 6 categories.

The pastrmajlija fair

Autumn

Štip holds an annual festival devoted entirely to pastrmajlija, where bakeries compete over the same long oval loaf.
