Food & drink

Taste of Kosovo

Kosovan cooking is patient and communal. Flija is built up in thin layers under a heated lid over several hours and eaten by a whole table; peppers and vine leaves are stuffed and baked; lamb and yoghurt go into the oven together. The high pastures give a hard salted sheep's cheese, the Rahovec hills give wine, and Turkish coffee marks out the day in small cups. 13 specialties, 7 categories.

Food traditions

Customs to know before you sit down — nothing here to tick off.

Making flija together

Flija takes hours of brushing on layers under a heated lid, so it is made by several people at once and eaten by everyone present.

The macchiato hour

Kosovo drinks more coffee out of the house than almost anywhere in the region, and a macchiato on a pavement is a fixed part of the day.

Wedding food

A Kosovan wedding feeds a whole extended village, and flija, roast lamb and trays of bakllava are the fixed points of the table.

Tasted means you have eaten or drunk it, wherever that was — at the source or at home, it counts. Photographs from Wikimedia Commons; credits and licences.
